Poor Fenn just can’t catch a break these days. Just when we thought he was finally getting over a long cold that turned into pneumonia, his second molar decides to start breaking through! He has been very needy for our love and attention these last two days and running a low grade fever. I stumbled upon this recipe for strawberry and banana “ice cream”, and decided it was just the pick me up Fenner (and I) needed.
Ingredients:
2 bananas (preferably organic, sliced and frozen- place them on a cookie sheet and freeze for 3-4 hours)
1 c of frozen strawberries (preferably organic)
about 2 tbsp almond milk (or milk of your choice)
1 drizzle of honey or agave nectar (optional)
1/4 tsp vanilla (optional)
Combine frozen strawberries and bananas in food proccesser and pulse until you have a fine crumble
Add milk, honey, and vanilla and pulse until smooth
Serve as is, or place into an ice cream container to freeze and serve later. I have these containers and love them!
Fenner has not eaten much today, but he loved this “ice cream”. I can also vouch for how tasty it was! It is a great treat without all of the extra sugar.
