Spinach Gnocch-wee for Dinner

Tonight’s dinner recipe came from weelicious! Here is the original recipe.  I only made a couple of my own adjustments…

1. I subbed fresh baby spinach for frozen ( no squeezing out water for me!)

2. I doubled the flour.  The mixture seemed a little too wet so I made the call to add a little extra flour.

3. I placed the gnocchi balls in the fridge for a couple of hours before cooking them.  This helped them firm up a bit.

As for the rest, I just followed the directions in the original recipe! Pretty tasty!

Fenner ate his with cherry tomatoes and grated parmesan (my marinara was not ready yet, and he was hungry).  He also had a side of cantaloupe. His nana just brought over a huge organic cantaloupe straight from her garden! Brad, Uncle Jason, and I had ours with homemade marinara.  We also had a delicious blueberry and quinoa crumble for dessert! As usual, Duchess cleaned up Fenner’s mess.
