While Fenner is down for his second nap of that day, score for mom, I figured I would write a quick post about the simple and YUMMY breakfast we had this morning! I really had a craving for waffles, but was feeling a bit lazy and didn’t want to do too much work. I stumbled upon a few quick and healthy waffle recipes on Pinterest lately so I decided to adapt one and make it my own. The result was not only easy, it was pretty tasty as well. The whole family approved.
Oat Waffles
2 1/2 C. oats ( I used 2 C. of old fashioned oats + 1/2 C. of steel cut oats for added crunch)
1 1/2 C. water
1 1/2 C. almond milk / milk of your choice
1/2 C. unsweetened applesauce
pinch of lemon zest (Brad says he would have preferred cinnamon. I will give that a try next time)
Combine all ingredients in the blender and pulse until smooth.
Spray a preheated waffle iron with coconut oil (or any oil of your choice) and pour in the batter.
Cook until they are slightly golden brown and crispy
I topped Fenner’s waffle with a dollop Greek yogurt and strawberries. Brad and I splurged. We had them with maple syrup and bacon. Don’t worry we did a family T25 work out to make up for it!
